Skinny Ice Cream Review

Yesterday I posted about a healthier ice cream that I wanted to give a shot.

As a disclaimer I love this site and can't wait to try more things, but this recipe just isn't for me.

If you love Almond Milk you will probably like this ice cream, it's a very practical alternative to regular ice cream and it's VEGAN!  So for those of you that are so already awesome you should try this recipe for yourself.

Now, for those of you who don't like almond milk, are used to full fat ice cream etc... I'm not saying don't try it, but i'm saying dont' expect miracles here it does NOT taste like rich fatty ice cream.

Now I did change up her recipe a little. She had posted that coconut milk would make it creamier so I did light coconut milk in hopes that it would mimic real ice cream more.


  • 1/2 cup unsweetened Vanilla Almond Milk
  • 1/2 cup Light Coconut milk
  • 1/4 tsp pure vanilla extract
  • very scant 1/16 tsp salt (don’t omit)
  • 3/4 T Agava



  • Mix the ingredients together in 1 or 2 shallow plastic containers. Freeze. (You could also use an ice cube tray.) Once frozen, pop the blocks out of the container (I thaw for 30 seconds in the microwave first) and blend in your Vita-Mix. (If you don’t have a vita-mix, you’ll probably have to thaw longer, but you can still get a yummy ice milk.)
I can say that my dislike was purely taste, texture was not an issue so I think this has potential but just wasn't for us.  I also tried this on my kids who were SUPER excited to be my guinea pigs.  The only one that said they liked it was our 3 year old, but then he didn't eat it all.

Finding my Love of Baking Again...

The last house we lived in had a horrible kitchen.  It was tiny, two small for two people to hang out in comfortably.  The kitchen was also far away from where the rest of the family was.  Cabinet space was a minimum and my oven was about the size of an easy-bake oven.  

The consequence of this was that I fell out of love with cooking.  I came to loath being in the kitchen away from my family and isolated from everyone's fun.  Our new house however has a wonderful open kitchen design, tons of cabinets and other than being  all white (had to be a mans choice no woman would ever chose white cabinets and white linoleum in a kitchen) it's set up very practically.  Now that we are more settled, I am remembering how much I loved to bake, cook, and generally be in the kitchen. 

As with the name of the blog this re-found love of cooking is bittersweet because I am currently on a diet. Wonderful baked goodies are not good for my waist line.  This "problem" has led me to seek out recipes that I can tweak and make healthier but still flavorful!  

I myself am a pretty tough critic and if you add my 6 kids to that we can stand in for any marketing research group.  

I should post this disclaimer... I LOVE full fat, butter, chocolate, 1039238182 calories things. Hence why I am on a diet.

I intend to start adding recipes here, the good the bad the ugly.  Tonight I started with some homemade ice cream I found made of Almond Milk.  I'm curious how I'll like this since the once time I tried almond milk I thought it tasted like...  anyway I like my milk straight from a cow.  Well not like from the utter, i'm not hanging out sucking the teet, but if I want milk I don't want some sorry ass excuse for milk I want the real deal.  

So the ice cream is in the freezer and i'll run it by my advisory board tomorrow and we'll have a verdict.  Stay tuned...

All I can say is that this should be a interesting journey.

It's the Magic Weigh-In Day

About a week ago I got sick of being fat.  Moving was stressful and I dealt with that buy eating away the stress. Let's just say I packed on some serious weight.

So, last Monday I signed up for Weight Watchers (again).  Last week was surprisingly easy.  I typically revolt against dieting I hate dieting with a passion, then again I don't know too many people who jump for joy at the idea of dieting.

Usually the first week of me dieting is like watching a heroin addict get through the shakes.  I'm bitter, pissy, and not terribly pleasant to be around.  This last week was different though (ok ok maybe there was one day), but the rest of the week I was awesome!

Today I hopped on the scale and what do my eyes see???  DOWN 6 POUNDS!!!  HOLLA!

Now I know this is first week weight loss fun and I won't be seeing this kind of droppage every week but for today I am basking in the wonderfulness of it all.

What I want...

I miss blogging. It's funny I didn't miss blogging until I started looking through an old blog and it brought back so many memories.


What is in the name?  La Agrodolce Vita aka The Bittersweet life pretty much sums up everything going on in my life right now.  Let me make a list for you....


We moved to a beautiful house in a wonderful neighborhood in an awesome school district recently, but my husband isn't home as much. :(


Since this move I had to take some time off of going back to school, but I am rediscovering my love for staying home.  I am also remembering some hobbies that I loved but lost time for when I was so busy with school.


I'm on a diet and already feeling better, but I LOVE food.


I have made fantastically wonderful new friends, but miss my old ones so much.


The list goes on, but you get the idea.


I want this blog to be a place I can keep track of my fitness goals.  I also want a space to keep track of new recipes I try and the successes and failures that will ultimately occur from tweaking recipes.  Lastly, life with 6 kids is busy and to quote Ferris Bueller, "Life moves pretty fast. If you don't stop and look around once in a while, you could miss it. "  I want to be able to keep track of the funny things, the moments, the milestones that makes our family so awesome.  


So here we are.  It might take me a while to figure out where this blog leads me, but I think it's going to be fun.
